Kadai Veg Recipe Restaurant Style | Kadai Vegetable | Veg Kadai Recipe | How To Make Kadai Vegetable | Kadai Vegetable Recipe | Veg Kadhai Recipe | Kadhai Veg | Mix Veg Recipe | Spice Eats Recipes Ingredients for Kadai Vegetable Recipe: (Tsp-Teaspoon; Tbsp-Tablespoon) Vegetables: - Beans, sliced- 1/2 cup (50 gms) - Carrots, sliced- 2/3 cup (75 gms) - Potato, sliced - 2/3 cup (1 big potato, 75 gms) - Cauliflower florets- 1 cup (75 gms) - Green Peas- 1/2 cup ( 50 gms) For Sautéing: - Capsicum (Green Peppers), cubed- 1 big ( 70 gms) - Onion petals- 1 medium onion Kadai Masala: - Coriander Seeds- 2 tsp - Cumin Seeds- 1 tsp - Fennel Seeds- 1/2 tsp - Whole Peppercorns- 1 tsp - Whole Red Chillies- 3 nos. Tempering/Baghaar: - Cumin Seeds- 1 tsp - Whole Red Chillies- 2 Spice Powders: - Turmeric Powder- 1/2 tsp + a pinch (or 1/4 tsp) - Red Chilli Powder- 1 tsp - Kasuri Methi (Fenugreek leaves, roasted and crushed)- 1 tsp - Garam Masala Powder- 1/2 tsp Other Ingredients: - Onions, fine chopped- 2 medium (150 gms) - Ginger Garlic paste- 2 tsp - Fresh tomato paste- 2 medium sized (150 gms) - Fresh Cream- 2 tbsp - Oil- 3 tbsp+ 1 tbsp for sautéing vegetables - Salt- 1 tsp or to taste - Coriander leaves, chopped- for garnish Preparation: - Cut the vegetables, wash and set aside. - To make the Kadai Masala, take a pan and add all the spices mentioned earlier. Switch on heat on low and keep stirring on low heat for 3 mins till the spices are dry roasted. Keep it on a plate to cool and then grind it into a coarse powder. (shouldn’t be smooth, check video for the texture) - Chop 2 medium onions and cut 1 medium onion into petals to be used for sautéing. - Cut 1 big or 2 small capsicum (green pepper) into cubes and set it aside. - Cut 2 medium tomatoes into cubes and blend into a paste. - Dry roast the Kasuri Methi and set it aside. Once cooled, crush it with your hand. Process: - Heat 1 tbsp oil in a pan and add the sliced beans, carrots and potatoes. Mix and sauté on medium heat for 2 mins. - Now add the cauliflower florets and green peas. Add 1/2 tsp Turmeric Powder and 1/2 tsp salt. Give a mix and continue to sauté for another 3 mins. - Remove and set it aside on a plate. - In the same oil, add the cubed capsicum (green peppers) and the onion petals. Give a mix and sauté on medium heat for 2 mins. Remove these in another plate. - Now heat oil in a Kadhai/wok and add the cumin seeds and when it splutters, add the whole red chillies. Give a stir and then add the chopped onions. - Fry on medium heat for 7-8 mins till light brown in colour. - Now add ginger garlic paste, give a mix and fry on low heat for 2 mins till raw smell is gone. - Add a pinch of turmeric powder, 1 tsp red chilli powder and 1/2 tsp salt. - Add 3-4 tbsp water, mix and fry on medium heat for 2-3 mins till it’s cooked and oil separates. - Now add the fresh tomato paste, give a mix and fry on medium heat for 3-4 mins till it’s cooked and oil separates. - Next add the fried vegetables, mix and fry on medium heat for 2 mins. - Now add the Kadai Masala made earlier. Mix it well and fry for 2-3 mins on medium heat. - Now add around 200 ml water. - Give a mix and cover & cook on low heat for 8-9 mins. - Now remove lid and add the sautéed capsicum and onion petals. CHICKPEA and VEGETABLE CASSEROLE Recipe | Healthy Vegan and Vegetarian Meal Ideas | Chickpea Recipes 💬 Let me know if you enjoyed my vegan roasted vegetable and chickpea recipe. ▶️ RECIPE INGREDIENTS: ✅ 👉 BAKING DISH: 9 X13 inches 2 Cups / 1 Can (540ml Can) Cooked Chickpeas 400ml / 1+3/4 Cup Passata / Tomato Puree 1+1/2 Tablespoon Maple Syrup (to balance the acidity of the tomatoes) 1 Teaspoon Ground Cumin 1/4 Teaspoon Cayenne Pepper (Optional) 1 Teaspoon Salt or to taste (I added pink Himalayan salt) 👉 Vegetables & other ingredients: 700g / 4 to 5 Medium YELLOW POTATOES (Yukon Gold) - Peeled and cut into1/8th inch thick slices (with skin 825g approx.) ✅ YELLOW POTATOES ARE LOW TO MEDIUM STARCH AND WELL SUITED FOR ROASTING 600g / 2 to 3 Zucchini (WITH THE TIPS 640g approx.) - Tips chopped off & cut into 1/4th inch thick slices 200g / 2 Medium Tomatoes (cut into 1/4th inch thick slices) 200g / 1 Medium Onion OR 2 small onions (with skin 655g approx.) - cut into 1/4th inch thick slices 1+1/2 Tablespoon Garlic - Finely chopped 1 Teaspoon Dry Oregano 1 Teaspoon Dry Thyme 1/2 Teaspoon Ground Black Pepper 3 to 4 Tablespoon Olive Oil Salt to taste (I added 1 teaspoon of pink Himalayan salt) 👉 Garnish: 2 Tablespoon / 6g Parsley - finely chopped 1/2 cup / 12g Fresh Basil Olive oil (I have added organic cold pressed olive oil) Ground black pepper to taste ▶️ METHOD: Start by prepping the vegetables. Thoroughly wash the vegetables. Peel and slice the potatoes into thin slices, 1/8th inch thick. Remove the tips of the zucchini and slice it into 1/4th inch thick slices. Same with the tomatoes and onion, cut it into thin slices. TRANSFER ONLY THE SLICES POTATO AND ZUCCHINI INTO A MIXING BOWL and set aside. DO NOT MIX THE TOMATOES AND ONIONS SLICES WITH the zucchini and potatoes. Keep it separately. ✅ 👉 THIS RECIPE USES YELLOW POTATOES. THEY ARE LOW TO MEDIUM STARCH AND WELL SUITED FOR ROASTING Drain 1 can of cooked chickpea OR 2 cups of home cooked chickpeas and add to a 9 x 13 inches baking dish. Add the passata/tomato puree, maple syrup, ground cumin, salt, cayenne pepper. Mix thoroughly until spices are well combined. Back to the mixing bowl with the zucchini and potato slices - add finely chopped garlic, dry oregano, thyme, ground black pepper, salt, olive oil and mix well until nicely coated with the herbs and oil. PRE-HEAT THE OVEN TO 400 F. Arrange the potato, zucchini, tomato and onion slices as shown in the video and lay it on top of the chickpea tomato layer. There may be a lot of liquid from the zucchini collected at the bottom of the bowl. DO NOT THROW IT. POUR IT EVENLY OVER THE LAYERED VEGETABLES. Fit in any extra slices of tomato/onion between the layers. Cover the baking tray with aluminum foil or if your baking dish has a lid then even better. Bake for 40 minutes covered at 400 F in a pre-heated oven. After 40 minutes, remove the baking dish from the oven and remove the aluminum foil covering. Bake it uncover for another 15 to 20 minutes or until the potatoes are cooked. IT TOOK ME 20 MINUTES IN MY OVEN. 👉 To check if the potatoes are cooked, stick a knife or a fork through one of the potato slices. If not cooked bake for longer. At the end of the baking process, SWITCH THE SETTING OF YOUR OVEN TO BROIL. Broil anywhere between 2 to 4 minutes or until the vegetables are golden brown on top. Remove from oven and let it sit on a wire rack. Brush the top of the vegetables with olive oil. Garnish with chopped parsley, fresh basil & black pepper. Serve hot with a side of crusty bread or rice or a green salad. ▶️ IMPORTANT TIPS: 👉 ✅ THIS RECIPE USES YELLOW POTATOES. YELLOW POTATOES ARE LOW TO MEDIUM STARCH AND WELL SUITED FOR ROASTING 👉 Thinly slice the potatoes about 1/8th inch (thinner than the other vegetables) to match the cooking time with the other vegetables 👉 The zucchini & potatoes release a lot of water after adding the salt/herbs/garlic. You can also use frozen peas. - For the tomato purée, you can use readymade tomato purée. In case you’re using tomato paste, dilute it with water if it’s too thick/concentrated. In case readymade tomato purée is not available, you can blend 2 red tomatoes and use that instead. There will of course be a variation in taste and color. - To sauté/fry the vegetables, heat 1 tbsp ghee in a pan and add the sliced beans. Sauté for 1-2 mins on medium heat and then add the sliced carrots and cauliflower florets. - Add 1/2 tsp salt to taste, give a mix and continue to sauté for 2 mins on medium heat. - Now add the green peas and 1/4 tsp turmeric & give a mix. - Continue to sauté on medium heat for another 1 min and then remove all the sautéed vegetables onto a plate - Dry roast the Kasuri Methi(Fenugreek leaves) and crush by hand once cooled. Process: - Heat 3 tbsp oil in a pan and then add the cumin seeds. - Once it splutters, add the whole Garam masalas and lastly the bay leaf. - Give a stir and then add the ginger garlic paste. Fry on low heat for 2 mins till the raw smell is gone. - Now add the tomato purée and 3-4 tbsp water. Give a mix and cook on medium heat for 2-3 mins till cooked and oil separates. - Add all the spice powders (Turmeric, Red Chilli Powder, Kashmiri Chilli Powder, Coriander Powder) and 1/2 tsp salt. Mix Veg Hyderabadi Recipe | Vegetable Hyderabadi Recipe | Veg Hyderabadi Gravy | Veg Hyderabadi | Mix Veg Recipe | How To Make Veg Hyderabadi | Vegetable Hyderabadi Sabzi | Spice Eats Recipes Ingredients for Mix Veg Hyderabadi: Vegetables & Paneer: - Green Beans, sliced- 120 gms (1.5 cups) - Carrots, thick slices- 100 gms (1 cup) - Cauliflower, small florets- 75 gms (1 cup) - Fresh or frozen green peas- 75 gms (3/4 cup) - Capsicum (Green Pepper), cubed- 75 gms - Paneer, small cubes- 50 gms For Masala Paste: - Onion, thick sliced- 1 medium (75 gms) - Ginger, chopped- 1” piece (8 gms) - Garlic cloves- 6-7 cloves (8 gms) - Green Chillies- 3 (cut into pieces) - Cashew nuts- 8 - Tomato, quarters or cubed- 2 small (100 gms) - Spinach leaves (Palak), whole if small or rough chopped- 1 cup (50 gms) - Coriander Leaves (roughly chopped) - 20 gms - Salt- 1/4 tsp Whole Spices for flavoring the oil : - Green Cardamom- 4 - Cinnamon- 2 small - Cloves- 3 - Black Cardamom- 2 - Bay Leaf- 2 Spice Powders: - Turmeric Powder- 1/2 tsp - Red Chilli Powder- 1 tsp - Coriander Powder- 1 tsp - Cumin Powder- 1/2 tsp - Garam Masala Powder- 1/2 tsp - Kasuri Methi ( Fenugreek leaves) dry roasted & crushed- 2 tsp Other Ingredients: - Fresh Cream (Malai)- 4 tbsp - Refined Oil- 4 tbsp - Ghee- 1 tbsp - Salt- 1 tsp Preparation: - Cut one medium onion into thick slices, peel & chop ginger & garlic. - Also cut the green chillies and roughly chop the spinach (if small can keep them whole) & coriander leaves. - Cut all the vegetables into slices/florets and the paneer into small cubes. To make the Masala Paste: - Heat 1 tbsp oil in a pan and add the thick sliced onions. Fry on medium heat for 2 mins and then add the chopped ginger, garlic cloves, cut green chillies and cashew nuts. - Give a mix and fry on medium heat for 2-3 mins till the onions are soft. - Now add the quartered or cubed tomatoes, salt and fry on medium heat for 2 mins till tomatoes are soft. - Now add the spinach leaves, mix and fry on medium heat for 1 min till soft. - Switch off heat and add the chopped coriander leaves. Give a mix and remove onto a plate to cool. - Now grind it into a smooth paste in a blender and set aside. Process: - Heat oil and ghee in a pan and add the whole spices. Stir and fry for 1 min to flavor the oil and then remove. - Now add the sliced green beans and carrots and green peas (In case you’re using frozen green peas, do not add it now. Add it later along with the green capsicum/pepper instead). - Sauté on medium heat for 1 minute . - Now add the cauliflower florets. Give a mix and add 1/2 tsp salt and turmeric powder. To make the masala for the pulao set a flat bottomed vessel over high heat & add oil & ghee, let the oil get hot then add all the whole spices along with onions, stir well & cook over medium high flame until the onions turn light golden brown. Further add ginger garlic green chilli paste, tomato & salt, stir well & cook over high flame for 2-3 minutes, you can add a splash of hot water if the masala gets too dry. Once the tomatoes have cooked, lower the flame & add in all the powdered spices, stir well & immediately add a splash of hot water & cook over medium flame for 1-2 minutes. Further add biryani masala to the curd & whisk it well so that no lumps remain & then add the curd into the masala, stir well & cook for a minute. Then add potato, carrot, french beans, green peas, fresh coriander & mint, stir well & cook until the potatoes are half cooked. Once the potatoes are half cooked, taste the masala & adjust the salt & spiciness, it should taste slightly saltier & spicier than usual to balance the flavours after the rice is added. Further discard the water in which the rice was soaked & add the soaked rice to the vessel along with fresh water & stir very gently & bring it to a simmer. Once the pulao comes to a simmer, cover the vessel with a lid & cook the pulao over medium low flame for 10 minutes. Once cooked for 10 minutes, remove the lid & check the pulao by inserting a spatula from the side to see if there’s water, if the water has dried completely then switch off the flame or else cook the pulao for 2-3 minutes more. Once cooked let the pulao rest for 5-10 minute before serving, then serve it by mixing the pulao from the sides & not the middle. Full Written recipe for Veg Kolhapuri Prep time: 25-30 minutes Cooking time: 25-30 minutes Serves: 5-6 people Kolhapuri base gravy Ingredients: • Oil 2 tbsp • cinnamon 1 inch • cloves 4-5 nos. • peppercorn 4-5 nos. • black cardamom 1 no. • green cardamom 2-3 nos. • cumin seeds 1 tsp • coriander seeds 1 tbsp • very spicy chilli 3-4 nos. • Kashmiri red chilli 7-8 nos. • poppy seeds 1 tsp • fresh coconut 3 tbsp • Water 50 ml Method: • Set a pan on low heat, add oil and the remaining whole spices, dry roast them on low flame for 1-2 minutes. • Further add the nariyal and stir & cook for 3-4 minutes on low flame or until the coconut has turned light brown in colour. Remove them on a plate & cool down to room temperature • Transfer them in a grinding jar, add water and grind into a fine paste. Keep it aside to be used later. For gravy Ingredients: For tomato cashew puree • Tomatoes 7-8 medium sized • Boiled cashew nuts 9-10 nos. For half fried veggies • Oil 1 tbsp • cauliflower 1/2 cup blanched • carrots 1/2 cup (diced) • green peas 1/2 cup • french beans 1/2 cup • onion petals 1/2 cup • capsicum 1/2 cup For gravy • Oil 1 tbsp • Jeera 1 tsp • bay leaves 1-2 nos. • Red chillies 2-3 nos. • Onions 2 medium sized (chopped) • Ginger garlic paste 1 tbsp • Green chillies 3-4 nos. (chopped) • Turmeric powder ¼ tsp • Kashmiri red chilli powder 1 tbsp • Water as required • Salt to taste • Kashmiri red chilli paste 5-6 tbsp • Paneer 200 grams (optional) • Garam masala 1 tsp • Kasuri methi 1 tsp • fresh coriander as required (chopped) • lemon juice 1 tsp Method: • For tomato puree, grind the tomatoes and boiled cashews together into a fine puree, keep it aside to be used later. • For half fried veggies, set a pan on medium heat, add oil, add cauliflower and stir fry on high flame for 1-2 minutes, remove in a bowl and keep it aside. • Further, in the same pan add carrots, green peas & french beans, stir & cook on high flame for 1-2 minutes. French beans, फ्रेंच बींस ½ cup Cauliflower, florets, फुलगोभी For Coating Salt to taste, नमक स्वादअनुसार 2-3 tbsp Cornstarch, कॉर्न स्टार्च ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट For Batter 4-5 heaped tbsp Cornstarch, कॉर्न स्टार्च 1 heaped tbsp Refined flour, मैदा Salt to taste, नमक स्वादअनुसार ½ cup Chilled water, ठंडा पानी 1 tsp Vinegar, सिरका ½ tsp Baking soda, बेकिंग सोडा 1 ½ tsp Oil, तेल Oil for frying, तेल तलने के लिए For Tempering ½ tbsp Sesame oil, तिल का तेल 1 inch Ginger, finely chopped, अदरक ½ tbsp Tender Coriander stem, chopped, धनिया के डंठल 1 tbsp Schezwan sauce, शेज़वान सॉस Fried Vegetables, तली हुई सब्जियां For Garnish toasted Sesame seeds, सफेद तिल 2-3 tbsp Spring onion, chopped, प्याज़ पत्ता Coriander sprig, (optional) धनिया पत्ता Process For Boiling In a kadai, add water, salt to taste, sugar, carrot, potato, baby corn. Boil the vegetables till half done, add french beans and cauliflower and boil for 2-3 minutes on moderate heat. Once the vegetables are parboiled, strain the vegetables and transfer into a bowl and immediately coat them with salt , cornstarch, ginger garlic paste and mix well together. Keep it aside for further use. For Batter In a bowl, add cornstarch, refined flour, salt to taste, water as required, vinegar and make smooth dripping consistency batter. Rest the batter for 10 minutes, now add baking soda, oil and mix it well. Keep it aside for further use. For Frying In a kadai add oil, once it's hot, dip the vegetables in the batter and deep fry until half done. Once vegetables are half cooked, remove it in an absorbent paper. Once the oil is hot enough, refry the vegetables until golden in color and crisp from all the sides. Remove into the tray and keep it aside for further use. For Tempering In a wok or kadai, add oil, once it’s hot, add ginger, tender coriander stem, schezwan sauce and saute for 10-12 seconds on high flame. Add prepared fried vegetables and toss it well. Once the vegetables are coated well in sauce, transfer it into a serving dish. Garnish it with toasted sesame seeds, spring onion and coriander sprig. Check out the Asian Paints Viroprotek products: 🤍 Full written recipe for Veg Diwani Handi Prep time: 10-15 minutes Cooking time: 25-30 minutes Serves: 4-5 people For base gravy Ingredients: • Oil 3-4 tbsp • Onions 4 medium size (sliced) • Cashew nuts 15-16 nos. • Tomatoes 5-6 medium size (quarters) • Ginger 1 inch • Garlic 4-5 cloves • Kashmiri red chillies 3-4 nos. • Salt to taste • Green chillies 2 nos. • Water 220 ml Method: • Slice the onions thinly, just the way we do for birista and further separate the layers. • Set a wok/handi on medium heat, add oil and cook until the onions are completely golden brown. The onions will darken further even after removing from the oil, so make sure to remove them just before they are about to get golden brown colour. Do not burn them, technically we need to fry the onions just the way we fry birista (onions for biryani) but using less oil. • Remove the fried onions over the paper towel to absorb excess oil, further transfer in grinding jar. • Now, remove 80 % oil from the wok/handi and add cashew nuts and roast them on medium low flame until golden brown in colour. Remove and keep aside. • In the same pan, add tomatoes, ginger, garlic, Kashmiri red chillies, salt to taste and green chillies, cook on medium flame for 2-3 minutes, add water and stir well. • Further cover & cook for 10 minutes on medium low flame, after cooking, switch off the flame and cool down to room temperature. • Further transfer it in a grinding jar, along with the roasted cashews and the fried onions, add some water to grind into a fine paste. The base gravy is ready. For half cooked veggies Ingredients: • Cauliflower 1 cup (florets) • Turmeric 1/4th tsp • Salt a pinch • Carrots ½ cup • Green peas • French beans ½ cup Method: • Set water for boiling, add turmeric powder, salt and cauliflower florets, blanch them for briefly 30 seconds and keep them aside. This step is usually done to remove impurities from cauliflower. • Now, take the same wok/handi and add the reserved oil used for frying onions, and fry the carrots, green peas, blanched cauliflower and french beans. Cook them on high flame for 3-4 minutes keeping them crunchy. Remove in a bowl and keep aside to be used later in the sabzi. For making the sabzi Ingredients: • Ghee 1 tbsp • Garlic 3 tbsp (chopped) • Green chillies 2-3 nos. (chopped) • Whole spices: 1. Dalchini 1 inch 2. Tej patta (Bay leaves) 2 nos. 3. Hari elaichi 2 nos. 4. Laung (Cloves) 2-3 nos. 5. Kaali mirch (black peppercorns) 3-4 nos. • Powdered spices: 1. Kashmiri red chilli powder 2 tbsp 2. Coriander powder 1 tbsp 3. Jeera powder 1 tsp • Blended base gravy • Hot water as required • Half cooked veggies • Ginger 1 inch (julienned) • Fresh cream 1/3rd cup • Garam masala 1 tsp • Kasuri methi 1 tsp • Fresh coriander leaves (chopped) • Kewda water 2 drops For tadka: • Ghee 2 tbsp • Almonds 5-6 nos. (halved) • Cashews 5-6 nos. (halved) Method: • Continue to cook in the same the wok/handi, add some ghee, garlic, green chillies & whole spices, cook on medium low flame until the garlic turn slight golden brown. • Now, low down the heat and add the powdered spices, add some water to prevent the spices from burning, and increase the flame to medium heat and cook the spices, cook until the oil & ghee is separated. • Now add the blended base gravy to wok/handi, you can add some hot water in the grinding jar to avoid the gravy wastage. Add hot water depending on the desired consistency of the gravy. • Stir well and cook for 10-15 minutes on medium flame, stir in regular intervals. • Further add the half-cooked veggies, ginger and mix well, taste the gravy and adjust the salt as per taste, stir well and cook for 7-8 minutes on high flame. • Now, lower the flame and add fresh cream, garam masala and kasuri methi, stir well and cook for a minute on low flame. • Finish with some freshly chopped coriander leaves and 2 drops of kewda water, make sure you don’t over do the kewda water as its very strong in taste. • Subz diwani handi is ready, serve it hot just by adding the nuts tadka. • For tadka, simply heat a tadka pan, add ghee and the nuts, fry until they are golden brown and top it over the sabzi. • Serve hot with some roti or naan or any indian bread your choice. (SLICED) • ROASTED KASURI METHI POWDER | भुनी हुई कसूरी मेथी का पाउडर A PINCH • GARAM MASALA | गरम मसाला A PINCH • FRESH CORIANDER हरा धनिया A HANDFUL (CHOPPED) Method: • To make the base masala set a wok over high heat, add oil once the wok gets hot & then let the oil heat up as well. • Further add red chilli, cumin seeds, onions & green chillies, stir well & cook over medium flame until the onions turn golden brown. • Add ginger garlic paste once the onions turn golden brown & cook for 1-2 minutes. • Lower the flame & add all the powdered spices along with a splash of hot water, stir well & cook for 2-3 minutes over medium high flame. • Further add tomato puree & salt, stir well & continue to cook until the masala thickens up & the oil separates, if the masala gets too dry then add a splash of hot water & continue to cook it, this process will take upto 10-12 minutes. • Once the tomato puree has cooked add ketchup & stir well, switch off the flame at this stage & your base masala for jalfrezi is ready. • Set a wok over high heat, add oil once the wok gets hot & then let the oil heat up as well. • Further the add cumin seeds & cauliflower along with a splash of hot water, cover & cook over low flame for 2-3 minutes until the cauliflower is soft. • Once the cauliflower is cooked, remove the lid, increase the flame to high & add carrot, french beans & all the remaining veggies except for sliced onions & tomatoes, stir the veggies well & toss over high flame briefly. • Then lower the flame again & add all the powdered spices, kasuri methi & butter, stir well & toss for 2 minutes & transfer the tossed veggies into the masala. • In the same wok add more oil & heat it up, then add the sliced onion & tomato, toss them over high flame for a minute then add them into the masala as well. • Now switch on the flame, stir everything well & cook for 2-3 minutes then taste & adjust the seasoning as per your preference & add roasted kasuri methi powder, garam masala & fresh coriander, stir well. • Your veg jalfrezi is ready, serve hot along with fresh tandoori roti / rumali roti / chapati. #yfl #SanjyotKeer #vegjalfrezi The Music I use in All my videos - 🤍 (Best for independent creators) Follow us on all platforms: Facebook - 🤍 Instagram - 🤍 Follow my personal handles here: (Chef Sanjyot Keer) Facebook - 🤍 Instagram - 🤍 Twitter - 🤍 Chapters Intro 0:00 Masala 1:03 Tossing Veggies & final cooking 3:48 Plating 6:20 Outro 6:59

Dear Traditional Lifers, Today morning I woke up early morning and I went to our agri land to have a look, meanwhile Valar woke up and she got ready to go to the vegetable market, when I came back she gave me a tea and we both had together, then we went to the market and got some vegetables. And the video starts here, we came back to home after buying vegetables, Valar surprised me with a bracelet which she has got it from the market while I was busy buying vegetables, now I am seeing my bracelet while tying this description it look & feels, she said this material will reduces the heat from our body so it is really a good thing since I have a heat body, then I was in some work around our home and Valar started to prepare vegetable biryani and veg curry, the way she selected the vegetable for the curry and biryani was good cox those are the right veggies for the right recipe, it really tastes fantastic with the right combination of veg biryani + veg curry with onion raita. Full written recipe forr Veg bhuna handi Prep time: 15-20 minutes Cooking time: 40-45 minutes Serves: 4-5 peoples For bhuna gravy Ingredients: • Ghee 2 tbsp • Oil 1 tbsp • Cumin seeds 2 tsp • Onions 5-6 medium sized (chopped) • Garlic 3 tbsp (chopped) • Ginger 1 inch (chopped) • Green chillies 2-3 nos. (chopped) • Curd ½ cup Powdered spices: • Turmeric powder ½ tsp • Kashmiri red chilli powder 1 tbsp + 1 tsp • Spicy red chilli powder 1 tsp • Coriander powder 1 tbsp • Cumin powder 1 tsp • Tomato puree 2 nos. (fresh) • Salt to taste • Hot water as required Method: • Set a handi on high heat, add ghee, oil & let it heat nicely, then add the cumin seeds & let them crackle. • Further add the onions, stir & cook on medium flame, the onions should turn completely brown, it will approximately take 12-15 minutes. • Now add garlic, ginger, green chillies, stir & cook on medium flame for 2-3 minutes then lower the flame. • Further in a separate bowl add the curd & all the powdered spices & mix all the ingredients well using a whisk, add the curd mixture to the handi & whisk continuously for 2 minutes, set the flame on high & cook the masala well until the ghee is separated, it will take about 4-5 minutes. • Once the ghee is separated add the tomato puree & salt to taste, stir & mix well, cook for 25-30 minutes, add hot water as required if the masala gets dry during the cooking process. • Once the masala is cooked thoroughly & turns brown, add hot water to make a semi thick gravy & boil it for 2-3 minutes then lower the flame. • Your bhuna gravy is ready. For tossing of veggies & final gravy Ingredients: • Ghee 1.5 tsp • Cumin seeds 1.5 tsp • French beans 1/3 cup • Carrots 1/3 cup • Baby corn 1/3 cup (boiled) • Broccoli 1/3 (blanched) • Green peas 1/3 cup (boiled) • Sweet corn 1/3 • Onion 1/3 cup (petals) • Capsicum 1/3 cup (diced) • Kasuri methi 1 tsp • Garam masala 1 tsp • Fresh coriander big handful (chopped) Method: • Set a pan on high heat & let it heat nicely, then add 1 tsp ghee along with 1 tsp cumin seeds & let the cumin seeds crackle. • Further add French beans & carrots, stir & toss on high flame for 1 min then add baby corn, broccoli, green peas & sweet corn, stir & toss on high flame for 1 minute again & add the veggies to the bhuna gravy. • Now add ½ tsp ghee along with ½ tsp cumin seeds in the same pan & let the cumin seeds crackle, then add onion petal & capsicum, toss on high flame for 30 seconds & add them to the bhuna gravy, stir & mix well. • Further add the kasuri methi & garam masala, stir well, remember that you don’t have to cook it for a long time as the vegetables & the gravy is cooked already, only cook for 1-2 minutes while stirring, taste for seasoning & adjust the salt accordingly, add the freshly chopped coriander & stir well again. • Your veg bhuna masala is ready, serve hot with tandoori rotis. #YFL #SanjyotKeer #VegBhuna The Music I use in All my videos - 🤍 (Best for independent creators) Follow us on all platforms: Facebook - 🤍 Instagram - 🤍 Follow my personal handles here: (Chef Sanjyot Keer) Facebook - 🤍 Instagram - 🤍 Twitter - 🤍

Crush into a smooth paste and keep it aside for further use. For Dhaba Style Mix Veg In a shallow kadai or handi, add oil once it's hot, add cumin seeds and let it splutter well. Add ginger garlic paste and saute it well. Add onion and stir it for 10-12 seconds on high flame, later add ghee and saute it for a while. Once the onions are golden brown, add coriander powder, turmeric powder and saute it for a minute. Now, add kashmiri red chili powder, tomatoes and saute it well. Once the masala is cooked, add water and cook it for 5 minutes. Now, add carrots and saute, once the carrots are cooked, add green peas, mushroom, french beans, cauliflower, water and mix well, cover it with the lid and let it cook for a while. Add paneer, dried fenugreek leaves, butter and mix it well. Once the vegetables are cooked properly. Transfer it to a serving dish. Garnish with the grated paneer, dried fenugreek leaves and coriander sprig.
