Support my work on Patreon: 🤍 I guess you never realize how much goes into a smash burger until you come up with a video idea, do the research, film it, and eat lots and lots of burgers. Hope you all enjoy. Cast Iron Griddle: 🤍 - - My Perfect Smash Burger - Ingredients: - Two 3 oz (85 g) balls of 80/20 beef + Salt & Pepper - Browned onions (1/2 onion + 2 TBSP butter) - Slice of American cheese - Martin's potato roll - Lettuce - Tomato, thinly sliced Heat your cast iron pan or griddle to medium heat for about 5 minutes. Right before cooking the smashed burgers, but them on high heat. Sprinkle your balls of meat with salt and pepper right before and plop them on the griddle. Immediately smash the burger into the griddle, applying firm and even pressure. Lift up and do not touch the burger. It needs to remain untouched for crust development. After a minute or two, the crust should have developed. Flip your metal spatula upside down and scrape all along the edges to make sure that the brown crust is intact. Once the crust is released, flip the burger over. Moving quickly, add some browned onions to one burger and a slice of American cheese. After another 30 seconds. Add slide the other patty on the cheese and assemble the burger in the following layers: 1. Toasted Bottom Bun 2. Burger Sauce 3. Smash Burger #1 4. Browned onions 5. American Cheese 6. Smash Burger #2 7. Burger Sauce 8. Tomato 9. Lettuce 10. Burger Sauce 11. Toasted Top Bun - My Favorite Burger Sauce - Ingredients: - 1/2 cup mayonnaise - (105 g) - 1 TBSP ketchup - (20 g) - 1 TBSP mustard - (20 g) - 1 TBSP sweet relish - (20 g) - 1 chile in adobo sauce, minced - 1 TBSP fresh onion, grated / minced - (10 g) - ¼ tsp smoked paprika - (1 g) - ⅛ tsp celery salt - (.5 g) - ⅛ tsp kosher salt - (.5 g) - ¼ tsp fresh cracked pepper - (1 g) 1. Smashburgers for beginners on the Blackstone. This is the easy classic way to make crispy, crunchy, cheesy, juicy burgers step by step. Enjoy!!! I mean it when I say that the smash burger is the best burger you can make at home (and probably the best you can eat at home too). In this recipe, I'm showing you how to easy-grind your own beef for extra beefy flavor, how to not smoke up your kitchen (too much), and a burger sauce that you'll be putting on all future burgers for life. Consider buying me a "coffee" here: 🤍 📸INSTAGRAM: 🤍 FOR THIS RECIPE, YOU'LL NEED: FOR THE BURGER SAUCE 125g or 1/2 c mayo 15g or about 3Tbsp chopped onion 60g or 1/4 c ketchup 25g or 1 2/3 Tbsp sriracha 15g or 1 Tbsp mustard 60g or about 1/2 cup bread and butt pickles 1/2 clove garlic, sliced 2g or 1/2 teas salt and 2g or 3/4 teas pepper 1. spin sauce ingredients up with an immersion blender and refrigerate until ready to use FOR THE BEEF PATTYS 1lb boneless short rib, cut into 1"x1" pieces and frozen for 15-20min 1. Load 1/2 of the 15-20min frozen beef chunks into a food processor and process on high for approx 20 seconds. 2. place on tray or in bowl and process the other half of meat. 3. once finished, toss both rounds of ground meat gently to combine 4. measure meat out into six 3oz portions 5. gently squeeze each into a ball, put between 2 pieces of parchment, and smash down with a flat bottomed pot. 6. Once finished smashing all 6 balls, refrigerate while you prep your toppings FOR THE TOPPINGS: burger sauce (recipe above) green leaf lettuce shallot, thinly sliced and rinsed dill pickle, sliced (i recommend claussen) kraft singles. don't 🤍 me. TO COOK THE BURGERS: 1. preheat cast iron skillet on high 2. using a pad of butter, toast your burger buns in skillet until golden brown 3. preheat 2 tbs of high smoke point neutral oil (canola, grapeseed) in the cast iron 4. Season one side of patties with salt and pepper and place s&p side down in cast iron. 5. now season the side facing up with salt and pepper then press down with a spatula. 6. cook on side 1 for about 90 seconds total, then flip, add the cheese to each patty, and cook on 2nd side for another 30 sec. once finished, assemble your burgers! This smash burger recipe is loaded up with my secret meat blend and is seared to perfection with melted American cheese, special sauce, and toppings on a toasted bun. Once you try it, this will hands down be your new favorite burger recipe The smash burger is a burger patty that is created by a ball of seasoned ground beef being smashed down on a griddle using a press that helps compress and flavor and cook faster. It is then served up on a toasted bun with sauce, tomato, onion, pickles, and lettuce. It is a delicious burger, and it cooks in way less time than a traditional burger. While most people associate this with the Smash Burger restaurant, it originated in Ashland, Kentucky at the Dairy Cherry Burger Shop by a man named Bill Cullerton. He created it by smashing burgers with a no 10 can of beans and discovered that it brought out a lot of flavors and cooked very quickly. It has become more popularized in the last 10 to 15 years across restaurants in the United States. PRINT OF THIS RECIPE AT Ingredients for this recipe: • 2 pounds 80/20 ground beef • 4 finely minced strips of bacon • 2 teaspoons Worcestershire sauce • 2 teaspoons sea salt • ½ teaspoon ground black pepper • ½ teaspoon paprika • dash of Tabasco sauce • 2 tablespoons oil • 8 American cheese slices • 4 leaves of green leaf lettuce • 2 thinly sliced Roma tomatoes • 1 peeled and thinly sliced red onion • 2 thinly sliced dill pickles • 4 toasted brioche burger buns • dijonnaise sauce

Ultra-Smashed Burgers


Classic smashed burgers are all about maximizing that deep, brown crust. But I found myself wondering, what if I were to take this to the extreme? Is there a way I could pack even more flavor into a burger? And thus, the ultra-smashed burger was born. Same burger size, but twice the amount of crisp, browned crust. Why this recipe works: - Smashing ground beef firmly into a non-greased pan or griddle increases contact points, delivering maximum crust and maximum flavor. - We use a bench scraper or better, a razor wallpaper scraper to scrape the burger up from the pan, making sure to get every last bit of tasty brown crust. - By cooking two 2-ounce patties instead of one 4-ounce patty, we get double the amount of crust, while a slice of cheese in between the patties keeps things moist. Note: These burgers cook very fast, so it's best to make them one at a time. If making multiple burgers, keep them warm under a tent of foil while preparing subsequent burgers. INGREDIENTS 1 soft hamburger roll, buttered and toasted Condiments and toppings as desired, such as mayonnaise, mustard, shredded lettuce, onions, tomatoes, or pickles 4 ounces freshly ground beef chuck, divided into two 2-ounce balls Kosher salt and freshly ground black pepper 1 slice good melting cheese, such as American or homemade melting cheese slices DIRECTIONS 1. Prepare burger bun by laying toppings on the bottom bun. Have it nearby and ready for when your burger is cooked. 2. Preheat a large stainless steel sauté pan or skillet over high heat for 2 minutes. Place balls of beef in the pan, and smash down with a stiff metal spatula or a clean mortaring trowel, pressing as firmly as possible to create a thin patty that is wider than the bun. 3. Season generously with salt and pepper and allow to cook until well-browned and top is beginning to turn pale pink/gray in spots, about 45 seconds. Using a bench scraper or razor wall scraper, carefully scrape burger patties from pan, making sure to get all of the browned bits. 4. Flip patties and immediately place a slice of cheese over one patty and stack the second directly on top. Immediately remove from pan and transfer to waiting burger bun. Serve.

How to make Oklahoma Onion Burgers at home on the griddle


#WayFruitFarm #RisingSpringMeatCo Backyard cooking - Oklahoma, or recession burgers on a Blackstone griddle. Oklahoma onion burgers got their start in the 1920's during the great depression. They were made out of a necessity to stretch the protein as much as possible. With the hamburger smashed thin and the onions pilled high you get a wonderful, flavor packed burger that satisfies your hunger. Much like all great things there is debate with where the Oklahoma Onion burger got its start. Some say El Reno, OK. Some say Ardmore, OK. I say it doesn't really matter. If you're looking for a wonderful burger with a punchy beef flavor that is really kicked up by the grilled sweet onions you wont be let down with this Oklahoma Onion Burger. To make these delicious smash burgers, I like to use Vidalia onions, slice them as thin as you can. Using a mandolin cutter makes this task quick, easy, and you get a uniform results Typically I use about 3 medium onions for 9 burgers. Take some high quality ground beef. We are fortunate enough to have locally raised beef available to us year round. 🤍 is our local USDA meat processing facility. They buy local meats that a lot of the times make it to fine dining restaurants in New York. But we get the benefit of locally raised meat that's done with the care and enthusiasm that comes the farmers and ranchers. You know the quality you get when you buy local and I think locally meat is a prime example of it. We buy our meat that's processed from Rising Springs Meat Company at Way Fruit Farm 🤍 They have a well stocked freezer section where you can find this amazing ground beef as well as a variety of other cuts and meats. Not to mention the whole Fruit part of Way Fruit Farm. They are our go to place for top quality locally raised vegetables, fruits, and meats. Separate and form the beef into 1/3 (one third) lb balls Drizzle some avocado oil on the griddle to provide some lubrication and which will eventually enable the onions to sauté better than just the dry grill. Now comes the fun part, drop the meat on the hot griddle. Using a heavy duty spatula smash that burger thin. The thinner the better. Salt and pepper the meat to taste, and then immediately put the onions on the top. Once the patty is browned on the edges its time to flip. Smash the burger one more time on top of the onions. Salt and pepper the newly flipped meat. Rest the buns on top of the cooking patty. You want to try and brace them against each other to make like a tent so that the steam from the onions and beef can moisten, season, and soften the buns. Once the buns are soft remove the top bun and place your choice of cheese on the patty and cover with the bottom bun. That's right, with Oklahoma Onion burgers , the cheese goes on the bottom. After you are satisfied with the melt level of your cheese the burgers are Done! I find it easier to flip the bottom section of the burger onto a plate and simply place the top bun on afterwards. There we have it Oklahoma Onion burgers. These burgers are fantastic just the way they are, or easily built upon. For instance add a good handful of sliced mushrooms at the same time you add the onions, and use some swiss cheese. it makes a fantastic mushroom swiss melt. This Smash Burger Changed The Way I Feel About Making Burgers


The great American smash burger is a true wonder of our nation. Pressing the beef onto a very hot flat piece of metal gives you a browning effect you just wouldn't get from simply making a patty and cooking it in a pan. Just make sure you're using beef with at least 20% fat content and it will work out extremely well for you.
