There's nothing better than a great grilled burger. And that's a topic of today's masterclass. We're going to give you 10 easy steps to follow to take your burger grilling to another level. Now, the first step that we're going to follow is our grilling game plan. And all this information can be found in our owners guides and our great cookbooks or the apps that are available. Now, the second step in grilling the perfect burger is inventorying our barbecue grill. Now that we've inventoried our grill, we're going to move on to step number three, and that's setting it up for direct grilling. Now, anything grilled under 20 minutes we'll be using that method. We're going to get our charcoal started, get it nice and hot, and we're going to move on to step number four, which is the pre-heat. We've set our grill up for direct cooking, now we need to pre-heat, and that's step number four. This is by far the most important step when you're grilling something. This sets the whole tone. It brings a grill up to temperature, it helps sear and caramelize which gives us all that great barbecue flavor. If we don't preheat our grill properly, food can stick to the cooking grate, it can also take longer which can dry it out. So what we're going to do is put our grates on, close the lid, open up our vents, and set our timers for about 15 minutes. We've got our grill pre-heating, now let's go on to the next step. That's the fifth one, and that's taking our burgers to another level. Here we have ground chuck. It's 80-20. We're looking for that 20% to really bring out all that flavor and that juiciness. Once we've got our meat we then need to combine our ingredients. This is going to bring out all that great flavor of the burger. Here we have some Worcestershire sauce, some ketchup, barbecue sauce, bacon, onions. Now once we've combined all those we're then going to form it into a patty, and that needs to be 3/4 of an inch tall. That's going to help it cook evenly on both sides. So make sure you're staying at that height. Now, before you take your meat and you put it on the grill, there's one last step, put a thumbprint right down the middle. We don't want the juices to pull in the middle. So once we've got all that stuff done, we're they're going to come back to the grill and go to the next step. Our burgers look fantastic. Now we're going to move on to step number six, and that's cleaning our cooking grates. We've cleaned our cooking grates, now we're going to go on to step seven, and that searing. Searing are those beautiful grill marks that you see on your food. Now we need to set our timer. Here I'm using our Weber app, and the time for these burgers is four to five minutes per side. If you notice some dark smoke coming out of the grill, there's a couple of things that we need to do. Either we close the damper which lessens the amount of oxygen inside the grill, or move your food to an indirect area. So now we're going to wait four to five minutes, and then we're going to get to the next step. Our timers just went off and that takes us to step number nine, and that's flipping. And we only need to do that once throughout the cooking process. And please, don't be one of those people that pushes down on the burger and lets all that juice and flavor out. Keep it in the burger. We've got our cheese melted and our burgers off, and that takes us to step number 10, which is resting. Any time that we grill anything we need our food to rest for at least 30% to 40% of the total cook time. Now, hopefully in this video we've been able to give you some great tips on how to take your burgers to another level. The Potato Trick Cut a potato in half and stab one half with a fork. Rub the hot grill with the cut surface of the potato. The heat removes starch from the potato, which creates a kind of non-stick coating on the grill. Now you can grill your meat without worrying about it sticking to the grill. 2. The Ice Cube Trick Press a small hole in the patty and place an ice cube inside. As the meat cooks, the ice will melt and all that moisture will be retained by the patty, which ensures a nice and juicy burger. It gets even better when you add a piece of butter on top of the ice cube. A flavor explosion awaits! 3. The Apple Juice Trick To make sure your steak is nice and tender on the inside but gets a beautiful crust on the outside, we're going to let you in on a secret: Spritz it with some apple juice. You're not going to believe the amazing results! 4. The Charcoal Trick If you get your coals too hot, the result might be disappointingly dry or burnt meat. The coals are ready when they're covered with white-gray ash and glowing evenly, which can take up to 30 minutes. To gauge the ideal cooking temperature, hold your hands about 6 inches above the grill. If you can't take the heat anymore after about 2 seconds, the charcoal is too hot. 5. The Rosemary Skewer Trick Instead of using regular wooden skewers, simply use sprigs of rosemary. This also has the added benefit of injecting some nice rosemary flavor into your shish kabobs. 6. The 3-Zone Fire Trick Divide the grill into 3 coal zones. The hottest zone (Zone 1) is where the coals are stacked closely together. The area with fewer coals is going to give off medium heat (Zone 2). The final section (Zone 3) does not get any coals. These 3 distinct temperature zones are going to help you cook your meat perfectly every time. 7. The Onion Trick Cleaning your grill can be a pain, but there's actually an easy way to do it. Cut an onion in half, stab one half with a fork, and rub it over the surface of the dirty grill. The onion juice acts as a disinfectant while also removing the invisible dirt from the grill. 8. The Sausage Trick Never stab or cut into a sausage while it's still on the grill. On the one hand, you're going to stab it to shreds, and on the other hand, all the fat will drip out. This will cause the grill to give off a lot of smoke, produce harmful toxins, and make the meat lose all its flavor. 9. The Lemonade Trick Cut a few lemons in half, dunk the cut surface into sugar and then grill them for 10 minutes until the sugar has caramelized. Now squeeze the lemons into a pitcher and add some ice cubes. Add a few more lemon slices to the pitcher, and voila, the perfect lemonade, straight from the grill! 10. The Resting Trick When you take a steak off the grill, cover it with aluminum foil for 1-2 minutes to let it rest. The result is going to be a super juicy, delicious steak. But if you're grilling brats, you can eat those right away or they're going to end up losing too much moisture and flavor. 11. The Newspaper Trick Do you still have to wrestle with a dirty and rusty barbecue rack? If the onion wasn't enough, try this one: grab an old newspaper and wrap the dirty barbecue rack in it. Grilling Burgers is a dinner favorite all around the country. Learn how to cook your burgers to perfection using a Weber Grill. Prepare your grill for direct cooking over high heat, which is great for cooking small, tender pieces of food that cook quickly. While the grill is heating, prepare the hamburger patties. After seasoning with kosher salt and pepper, shape the burgers into 6 ounce patties that are 3/4 of an inch thick. Place the patties on the grill, close the lid, and cook for 4-5 minutes. Then check to see if the patties are ready to be flipped. You can flip the patties if you can slide them off the cooking grate without sticking. Flip the patties, close the lid, and cook 3-5 minutes more.Remove the from grill and serve on buns with your favorite toppings. Everyone loves a great hamburger, so take a look as Chef Tony walks you through the dos and don'ts of grilling hamburgers. Learn to fix all your rubbery problems, rounded patty problems, and dry burger problems. Chef Tony Page: 🤍 Transcript: Hi, I'm Chef Tony Matassa of BBQGuys.com; a Shopperschoice.com site. In this video we'll take a close look at answers to several different questions I often get asked about grilling hamburgers. Often, grillers find their hamburgers have a rubbery or dry texture, sometimes they say their patties lack flavor, there is of-course the tennis ball patty, that swells in the center and my favorite "I want a well done hamburger, but I don't want it to be dried out" We'll begin by fixing dry rubbery textures. When blending ground beef and seasonings, don't over-work and smash the meat. When forming patties, steer clear of over patting or tightly compressing. This includes using machinery or gadgets to smash them out. To properly form patties, lightly press down, only a couple times. With our patties formed, we're ready to cover the tennis ball phenomenon. To prevent this, simply place and indention in the center of each patty with your thumb. While cooking the center will rise to meet the rest of the burger; instead of going all tennis-ball on you. When considering how to make hamburgers with better flavor, a good rule of thumb is to start out with 80/20 ground chuck. If instead, you use generic 80/20 ground beef, it could come from anywhere on the cow, blended together at the same lean to fat ratio. Which can cause major inconsistencies in flavor. Now how do we grill a well done hamburger that isn't as dry as shoe leather? The best way I know how, is to place a small hole through the center of the patty; which will help to cook the inside, before completely drying out the outside of the hamburger.
