Ingredients Wheat flour - 1 1/2 cup Salt - 2 to 3 tsp Water - 1 cup Method Heat a pan and add wheat flour. Saute and roast them well. Remove from fire and transfer to a plate for cooling.  Heat water in an idli steamer. Cover and boil them well. Take a bowl, add roasted wheat flour, and salt. Mix them well. Add water little by little, mixing thoroughly, till they become smooth dough. Then fill the dough into the idiyappam press and close the lid. Take a banana sheet and sprinkle some grated coconut Then press the dough into a circle shape onto the banana leaves. Then repeat the same process for the balance of the dough. Then they placed the idiyappam dough into the steamer one by one. Cover and cook for 8 to 10 minutes. Once it is ready, remove the idiyappam from the steamer and set it aside.   Egg curry Ingredients Egg - 5 nos Onion - 3 nos Ginger - 1 nos Garlic - 7 to 8 nos Green chilli - 2 nos Curry leaves - 3 to 4 sprigs Tomato - 2 nos Turmeric powder - 1/2 tbsp Red chilli powder - 1 tbsp Coriander powder - 1 tbsp Garam masala - 1 nos Mustard seed - 1 tsp Salt - 1 or 2 tsp Oil - 3 to 4 tbsp Method Heat water in a pan add eggs and salt, Cover and boil them well. Drain and peel the boiled eggs, set aside. Take a pan, add grated coconut, and water. Squeezed them well with hands. Drain the thick coconut milk and set it aside. Then cut the boiled eggs in half and set aside. In a pan, heat the oil and add the mustard seeds, allowing them to sputter. Then add ginger and garlic. Add chopped onion, green chilli, and curry leaves. Saute them well for a few minutes. Sprinkle with salt and saute the onions until they are translucent. Add turmeric powder, red chilli powder, coriander powder, and garam masala. Saute until the raw smell of the spices completely disappears. Then add the chopped tomatoes and sauté them well. Pour a sufficient amount of water over them and thoroughly boil them. Add thick coconut milk and combine them well. Then add boiled eggs and mix them well. Cook for 4 to 5 minutes. Cardamom- 2 nos Cinnamon – 1 nos Cloves- 2 nos Pepper seed – 1 tsp Fennel seed – 1 tsp Salt – 1 o2 tsp Oil – 2 or 3 tbsp Method Heat oil in a pan add cardamom, cinnamon, cloves, pepper seed and fennel seed saute them well. Add grated coconut and saute them well. Then add some redchilli powder , coriander powder and turmeric powder ,roasted them well and set aside. Grind the roasted coconut and other ingredients into fine paste and set aside. Again grind ginger and garlic into fine paste and set aside. Heat oil in a pan add fennel seed ,lets crackled . Add chopped onion saute for 2 to 3 minutes. Add grinded ginger garlic paste,green chilli and curry leaves saute them well. Add chopped tomatoes and salt saute them well. Cover and cook till the tomatoes become soften. Add grinded coconut masala and mix them well. Then pour some water into the masala bowl and add the water into curry pan. Add sufficient amount of water into the pan ,cover and boil them well. Add cleaned chicken pieces mix them well. Cover and cook till the chicken become soften . Remove from fire and set aside. Ingredients Rice - 2 or 3 cups Water - 1 or 2 ltr Method Heat water in a pot ,cover and boil them well. Wash rice at least 5 to 6 times. Then add rice to the hot water Cover and cook them well. If you press the rice after it is cooked, the rice should be mashable but not too mushy. Now drain the excess water.and place it a slant position so that the excess water drains away. Ivy gourd thoran Ingredients Ivy gourd - 1 kg Shallots - 9 to 10 nos Garlic - 5 or 6 nos Curry leaves - 2 or 3 sprigs Grated coconut - 1 cup Turmeric powder - 1 tsp Cumin seed - 1 tbsp Mustard seed - 1 tsp Salt - 1 or 2 tbsp Oil - 3 or 4 tbsp Method First we have to wash and drain the ivy gourd ,set aside. Then chop the ivy gourd into small pieces Then grind the green chilli and cumin seeds into a fine paste. Then add grated coconut , turmeric, and curry leaves into a smooth paste  Again, add shallots and garlic into a fine paste, then combine and make a coarse mix. Heat oil in a pan add mustard seeds. Let them splutter. Then add curry leaves and saute them well. Then add chopped ivy gourd and saute them well. Add coarse coconut mix and saute them well. Sprinkle some salt and combine them well. Cover and cook them well. Remove from fire and set aside. Serve the tasty ivy gourd Thoran (Kovakka Thoran ) with meals. Fish fry Ingredients Mackerel fish - 1 kg Ginger - 1 nos Garlic - 7 or 8 nos Dry red chilli - 5 or 6 nos Coriander seed - 1 tbsp Pepper seed - 1 tbsp Turmeric powder - 1 tbsp Salt - 1 or 2 tbsp Oil - 5 or 6 tbsp Method Firstly, we have to cut and wash the fishes Then make deep slits on both sides. Then we have to grind dry red chilli,coriander seed,pepper seed,ginger and garlic into smooth paste ,set aside. Take a pan add cleaned mackerel fishes. Then add salt and turmeric powder Now add grinded red chilli paste and mix them well. Then marinated for half an hour. Heat oil in a pan, add marinated fish and fry them well, Then one side becomes crispy before flipping to the other side. Fry both the sides till golden brown. Drain and keep aside. Serve the tasty mackerel fish fry with tasty meals Grilled coconut chutney Ingredients Coconut - 1/2 pieces Dry red chilli - 5 or 6 nos Shallots - 6 to 7 nos Ginger - 1 nos Garlic - 6 or 7 nos Curry leaves - 2 or 3 sprigs Salt - 1 or 2 tbsp Method Firstly, we have to crush the coconut shell. Remove the coconut pieces from the shell and grill them over the flame. hen grill the dry red chilli and set aside. Wash them well and drain ,set aside. Then crushed the grilled coconut ,set aside. Then grind grilled dried chilies and salt. Again add crushed grilled coconut and grind them well. Now we have to crush shallots,ginger ,garlic and curry leaves Then combine them well and make a coarse mix. Then transfer into a bowl and set aside. Potato fry Ingredients Potato - 2 or 3 nos Curry leaves - 2 or 3 sprigs Turmeric powder - 1/2 tsp Red chilli powder - 1 tbsp Salt - 1 or 2 tbsp Oil - 4 or 5 tbsp Method Firstly we have to peel the potatoes and set them aside. Then chopped the potatoes into medium-sized cubes  Wash them well and set aside Heat oil in a pan, add curry leaves Then add  chopped potato cubes and saute them well. Add salt and turmeric powder,saute them well. Then add red chilli powder and saute them well. Cover and cook them well. Continue to stir often and cook till the potatoes are lightly crisp. Remove from fire and set aside. Egg omelet Ingredients Egg - 2 nos Shallots - 6 or 7 nos Green chilli -2 or 3 nos Salt - 1 or 2 tsp Oil - 2 or 3 tbsp Method Take a bowl then chopped the shallots, green chilies and curry leaves Crack in two eggs and beat well. Heat oil in a pan Then pour the beated egg mix and fry them well. Today we roasted a whole buffalo in Our village . First of all we dug a large deep rectangular tandoor pit and build the pit with bricks and make arrangements needed for roasting the whole Buffalo. We marinate the whole Buffalo with spicy masalas and kept it to rest. And prepare the tandoor pit for roasting the Camel with charcoal fire. Then place the Marinated Buffalo inside the pit and close the tandoor for 6 hours... Finally the Roasted buffalo tasted yummy and awesome with Arabian mandhi rice.. Kerala style beef curry recipe Ingredients Beef – 1kg Onion- 3nos Shallots- 9 or 10 nos Green chilli – 2 nos Ginger – 1 nos Garlic – 6 or7 nos Tomatoes – 2 nos Curry leaves – 2 sprigs Chilli powder – 1 ½ tbsp. Turmeric powder – ½ tsp Black pepper powder – 1 bsp Dry red chilli – 5 or6 nos Coriander seed – 1 tsp Fennel seed – 1 tsp Cardamom – 2 nos Cinnamon – 1 nos Coconut slices – 1 cup Mustard seed – 1 tsp Salt – 1 or2 tsp Oil – 3 or4 tbsp Method Take a pan add cleaned beef ,chilli powder and turmericpowder mix them well with clean hands ,set aside. Crush ginger andgarlic into fine paste andset aside. Again add chopped onion, shallots and green chilli . Add some amount of crushed ginger garlic paste mix them well. Pour half cup of water and combine well, Then cook the beef till they become soften. Heat a pan add dry red chilli ,coriander seed and small amount of oil ,fry them well and set aside. Then garam masala like fennel seed ,cardamom,and cinnamon into fine paste and keep aside. Again grind fried dry red chilli and coriander seed into pine paste keep aside. Now add some salt into the beef cooking pan, cook them well. Heat oil in a heavy bottom pan add mustard seed ,lets them crackled . Add coconut slices saute for 3 to 4 minutes. Add chopped onion ,shallots,green chilli, ginger garlic paste and tomatoes ,saute them well till they become soften . Then add grinded fine paste like garam masala paste and red chilli coriander paste mix and saute them well. Add cooked beef ,salt and water combine them well and cook for 6 to 7 minutes. Finally add some curry leaves and black pepper powder mixandcook for few minutes. Remove from fire and keep aside. Then sprinkle some salt into the chopped onion pan  mix them well with hands,so that the water from the onions start to come out Then add all-purpose flour  and Combine them well with the onion  Then add chopped ginger,fennel seed ,curry leaves and green chilli  Then add red chilli powder and mix them well. Ingredients. Raw rice- 1kg Urud dal -1/2kg Fenugreek seed -1 tsp Salt -1or 2 tsp Method Take a pan add raw rice, urad dal, and fenugreek seed. Then add sufficient amount of water and soak for 2 hrs. After soaking drain and again wash with clear water and set aside. Then grinded the soaked ingredients by using grinder . Add sufficient water and grind them well into smooth batter. Then transfer the batter into a bowl and fermented for 1 or 2 hrs. After fermentation add some salt and combine them well. Heat a cast iron pan. When the pan becomes hot, pour and spread the batter. Once the dosa edges look lacy and golden-brown and the top has dried out completely then flip the other side and cook for few minutes , remove to a plate. Serve the delicious dosa with chutney . 1. Coconut Oil - 2 tbsp Heat coconut oil. 2. Mustard Seeds - 1 tsp Splutter mustard seeds. 3. Dry Red Chilli - 2 Add Dry Red Chilli on low flame. Give a quick stir. 4. Onion - 1/4 cup chopped 5. Green Chilli - 1-2 6. Curry Leaves - few 7. Salt - to taste Saute. 8. Beetroot - 250 gm 9. Salt - to taste Saute 2 minutes. 10. Grated Coconut - 1/4 cup 11. Turmeric Powder - 1/4 tsp (you can also add turmeric powder while sautéing onion instead of this) 12. Curry Leaves - few 13. Salt - to taste Keep it covered as shown in the video. 14. Water - 1/4 cup When water boils, cover & cook. After 2 minutes, open and mix well. Again cover and cook until it is tender. Vegetable kurma recipe Ingredients Potato -2 nos Beans -5 or 6 nos Carrot -2 nos Coriander leaves -one hand full Green peas-5 tbsp Onion -2 nos Green chilli -3 nos Ginger -1 nos Garlic -5 or 6 nos Grated coconut – 1 cup Cashew nut-8 or 9 nos Turmeric powder-1 tsp Cinnamon-1 nos Cardamom-3nos Cloves-2 to 3 nos Black pepper -1 tsp Fennel seed -1tsp Oil -2 or 3 tbsp Salt -1 or 2 tsp Method Firstly we have to peel and cut all vegetables like potato,carrot and beans set aside. Heat oil in a pan add cinnamon, cardamom,cloves and fennel seed saute them well Add chopped onion, green chilli, black pepper, ginger, garlic and cashew nut saute them well Then add grated coconut and turmeric powder saute and roast them well ,set aside Heat water in a pan add cleaned green peas. Then add chopped vegetables like potato carrot and beans, saute them well. Then sprinkle some salt and turmeric powder mix it well and cook till they vegetable and green peas become soften. Now we have grind roasted coconut mix into fine paste and add some water combine them well and set aside. Heat a pan add grinded coconut paste and water ,cooked vegetables and green peas and mix them well,and cooked well. Finally spring some coriander leaves .
